藍鰭吞拿魚為高品質的吞拿魚，屬高級食材，所以這種吞拿魚在普通壽司舖中也很少見，一般只有在高級壽司店才會有供應。
一尾吞拿魚可分為赤身(Maguro/Akami)及拖羅(Toro)兩部分。把魚身橫切，上半部分即魚背位稱為赤身。
赤身佔整條魚近五成部分，魚肉呈赤紅色故名之，肉質鮮嫩而結實，極小脂肪；營養價值豐富，含多種維他命，包括A、B1、B2、C、D、E；由於肉質含豐富的蛋白質、DHA及不飽和氨基酸，常食用可防止老化，血管硬化，血栓等疾病。
