What is the best way to enjoy sashimi?
For the best experience, sashimi should be fully defrosted before serving. You can enjoy it plain or dip it in soy sauce or wasabi according to your preference.
How should I defrost sashimi?
There are two recommended methods:
Saltwater method: Prepare a saltwater solution (100 ml water + 4 g salt). Place the frozen sashimi into the solution and soak at room temperature until fully defrosted. As a guide:
Summer: approx. 30 minutes
Winter: approx. 1 hour
Refrigeration method: Place the frozen sashimi in the refrigerator (4°C) for 8–10 hours. After defrosting, gently pat the surface dry with kitchen paper.
⚠️ Important: Once defrosted, sashimi should be consumed promptly. Do not refreeze.
How should I cut sashimi?
For best results, use a dedicated sashimi knife and cutting board to maintain hygiene and food safety. At home, a sharp stainless-steel santoku knife is a practical choice.
Always use a sharp knife – a blunt knife will crush the fish and spoil the texture.
Cut across the natural grain of the fish to break down connective tissue without damaging the flesh.
Slice thickness and angle affect both taste and mouthfeel, so cut with care.
